This is my biscuit. It is the one that's always requested by family and friends, time and time again.
These delightful little drops of heaven are my go to snack when I feel like a bit of something something with coffee.
I have made different versions of it and every time I follow someone else's they end up like a pancake. So this what I do.
Ingredients:
125g butter, softened
1/2 cup caster sugar or brown sugar or sweetener
1 teaspoon vanilla essence
1 egg
1 1/4 cups self-raising flour
1/4 cup of flour
Plain flour, to dust
1/3 cup strawberry or raspberry jam
Method:
Preheat oven to 180°C and put baking paper on two trays.
Beat the butter, sugar and vanilla essence together in a bowl until it looks pale. Add the egg and continue until all combined.
Add the flours to the mixture and combine.
Flour a board along with your hands and then take a teaspoon of mixture and roll it into balls. Then put them all on the baking trays.
Make a small dent in the middle of each ball (use your finger or the back of a teaspoon) and then add the jam into the centre. Don’t overfill it.
Bake in the oven for about 8 to 10 minutes, depending on your oven. Once they are a light golden colour, take it out of the oven and let it cool down completely.
That's it! Pretty simple.
Now if you are feeling adventurous, I have also made the raspberry and strawberry jam from scratch but it can be time consuming so a jar is also just as good. Let me know if you want to know a recipe for that.
