Choc Chip Biscuits


Ok full disclosure these biscuits have sugar. I am working on a sugar free one (including the chocolate) so stay tuned.


In the meantime, enjoy these biscuits of heaven. I made these on the weekend and they were gone before mid week... and there has been a request for more. So they must be good.


These biscuits are super easy to make and bake quickly if you want something right away.


Makes 15-20 biscuits depending how big or small you want your biscuits


Ingredients:

  • 150g butter, softened

  • 1/2 cup brown sugar

  • 1/2 cup caster sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1 3/4 cups plain flour

  • 1/2 cup milk choc chips

  • 1/2 cup dark choc chips

  • If you are feeling mixing it up you can swap one for white choc chips or nuts.. whatever is the pantry


Method:

  1. Preheat oven to 180C and line 2 baking trays with baking paper.

  2. Beat the butter and sugars until smooth and combined.

  3. Then beat in egg and vanilla

  4. Add in flour.

  5. And then add the dark and milk choc bits with a spoon until combined.

  6. Grab a ice cream scoop or tablespoon and scoop a tablespoonful of mixture into balls and place on the trays. Make sure to leave space between biscuits, or 3cm apart. Press down slightly.

  7. You can add extra choc bits on top of you like but I like it mixed through.

  8. I chill my biscuits in the fridge before I bake so they don't spread but I also live in a hot climate so it's necessary

  9. Bake for 10 minutes or until light golden and cooked, and then transfer to a rack to cool.


Pretty straight forward. It might cool quicker than 10 minutes depending on your oven but I liked mine slightly soft in the middle. It does harden as it cools.
