This is a new find for me. I found the original version from One Handed Cooks but it was full of sugar despite the fact its targeting children and families. Not on in my book. You can have sugar but there was a lot in the original version that I was not comfortable with.
So I have made my version a few times for my family and for other colleagues and it is definitely a winner.
A slice that's better than a traditional chocolate slice.
Makes 16
Prep Time: 15 minutes
Cooking time: 20 minutes
Ingredients
150g butter, melted and cooled
3/4 cup of sweetener
1 egg, beaten
1 medium zucchini, grated or use a food processor
1 teaspoon of vanilla extract
1/2 cup of whole meal flour
1/2 cup of whole meal self-raising four
1/4 cacao powder
Optional: 3/4 cup of desiccated coconut + extra for the top of the slice
Chocolate icing (optional if you want... so worth it)
3/4 cup of monk fruit icing powder
1 tablespoon of cacao powder
1 tablespoon unsalted butter, softened
1 tablespoon of boiling water
Method:
Preheat oven to 180C and line a square tin with baking paper (I used a 20 cm tin)
Place the butter, sweetener, egg, zucchini, and vanilla into a bowl, mix it up until its all combined
Add the flours, cacao powder, and optional coconut to the rest of the mixture and stir until combined
Spread the mixture into the tin and bake for 20 minutes or until firm to touch. Bring it out the oven and let it cool down before you spread the icing.
To make the icing, add the icing powder, cacao together then add the softened or melted butter to the mix then add the boiling water and stir until smooth. At this point I stick the icing in the fridge to let it harden a little but that's your call.
Spread the icing on the slice and you can add a little bit of coconut to dress it up.
Cut up the slice and store it in the fridge.
Notes:
This slice lasted a few days in our house but you can store it in the fridge for 5 days.
