Lime Coconut Bliss Balls

Something simple to make for when you need a quick snack

Love these bliss balls. So easy to make when you want a snack on the go or something to eat when working from home.

Ingredients:

  • 100g cashews (need to soak in boiling water for 10-20 mins to soften)

  • 1 cup desiccated coconut, plus extra for rolling

  • 1/2 cup almond meal

  • 1/2 cup maple syrup

  • 1 lime zest and juice


Method:

  1. Place cashews, coconut, almond meal, maple syrup, lime juice and half the zest into the food processor. Blend it up.

  2. Make sure your hands are wet to roll the mixture as its sticky. Mix into a walnut size ball and then roll into the extra coconut and place on a tray/plate.

  3. I add mine to the fridge and store it there.

Notes:

  • Bliss balls store for one week in the fridge.
