Honey "Batman" Biscuits


These are hands down the easiest biscuits to make! My son started school this year and I needed a little "treat" to add to his lunch box without sugar. Surprise surprise.


FYI I would have the baked version but my son demolished them. No surprises there either. Clearly they are a winner in our house.


You can use whatever cookie cutter you want. My son loves Batman and superheroes so that was the cookie for this week but have some fun with it.


Ingredients:

  • 1/4 cup butter - softened or melt the bugger in the microwave for 20 seconds

  • 1/2 cup honey (alternative is maple syrup if you are not a fan of honey)

  • 1 cup plain flour (or wholemeal flour if you want a more earthy taste.. pretty good)

  • 1/2 cup self-raising flour

  • 1/2 tsp bicarbonate of soda

  • 1 tsp vanilla extract

  • If a little dry, I add a tablespoon of honey at the end just to help


Method:

  1. Most important step, preheat that oven to 180 degrees, and line two trays with baking paper or use a reusable/sustainable baking mat

  2. Add all the ingredients to your mixer and mix until completely combined.

  3. If dry, add a little bit of honey or if the opposite (cause its hot where you live) a 1-2 tablespoons of flour.

  4. Pull the dough out into cling wrap and then let it settle for 15 mins at room temperature or if too hot (like my house) i put it in the fridge for 15 mins.

  5. Roll out the dough on a floured board with a rolling pin (I did it 6mm so its a bit soft when baked or if you like a crunch try 3mm).

  6. Cut out the dough with your cutter - I used a tiny one as I wanted lots of biscuits and small enough to fit in the bento boxes that a bloody small. I got about 3 to 3 1/2 trays of tiny biscuits.

  7. Bake for 6-8 minutes. It all depends on your oven. So watch them... they burn quickly. If are going thinner style biscuits then 5-6 minutes is enough.

  8. Once its golden, take them out and let them cool down and watch them get demolished. Enjoy!


Note: you can change this up - You add choc chips, dried fruit, or cinnamon or cocoa/cacao powder, whatever you feel like. I like honey biscuits because its simple and a classic.
