Chocolate + Ginger Protein Biscuits

Yes, delicious biscuits with no, repeat, NO SUGAR! Enjoy.

Ingredients:

  • 125g butter, softened

  • 1/2 cup sweetener

  • 1/2 cup golden syrup

  • 1 egg, lightly whisked

  • 2 cups plain flour or whole meal flour

  • 3/4 cups of plain protein powder... or you can use vanilla

  • 1/4 cup (25g) cocoa powder

  • 1/2 tsp bicarbonate of soda

  • 3 tsp ground ginger


Method:

  1. Preheat oven to 180°C. Line 2 baking trays with baking paper... sometimes 3 trays depending on the size the of shape of biscuit.

  2. Use an electric mixer to beat the butter, sugar and golden syrup in a bowl until pale and creamy. Add the egg and beat until just combined.

  3. Add the flour, cocoa powder, bicarbonate of soda, ginger and mixed spice and stir to combine.

  4. Turn onto a lightly floured surface and gently knead until smooth.

  5. Cover with plastic wrap and put it in the fridge for at least 30 mins. Very important step!

  6. Roll out dough on a lightly floured surface to a 3mm-thick disc. Use a 9cm cutter to cut out shapes and place on the lined trays, rerolling dough scraps.

  7. Bake for 10-12 mins or until just firm. Set aside on the trays to cool.

Now you can add decorations... this part is definitely sugar... but I think it balances it out with the biscuit being healthy.


I have done a few different versions but this is my Christmas decorated version that was gobbled in 48 hours. Or you could easily just make the icing (see below) and add m&ms on it. Whatever works.



  • To make the royal icing, whisk the egg white and lemon juice in a medium bowl. Gradually add the icing sugar, stirring well after each addition, until a smooth paste forms.

  • OR you can buy icing sugar, add egg white powder with 1/2 cup of water and mix until it forms a toothpaste like consistency.

  • Your call which way works for you. I prefer the latter version as its easier but each to their own.
