What can I say, donuts that are actually healthy! What the....

I discovered these a few months ago and they are a staple in our house. It also means my young son can have a "treat" without the sugar and everything else that comes with donuts. Let me know what you think.


Makes: 12

Prep Time: 5 mins

Cooking time: 12-15 mins


Ingredients

  • 1/3 cup coconut oil, melted

  • 1/3 cup maple syrup

  • 2 large eggs

  • 1 cup almond meal

  • 1/2 cup natural or vanilla protein powder

  • 2 tsp baking powder

Chocolate and coconut icing

  • 2 tbs coconut oil

  • 2 tbs maple syrup

  • 1 tbs cocao or coco powder

  • 1/4 cup of milk

  • 1 1/4 tbs desiccated coconut

Method

  1. Preheat over 180C and grease up a donut tin

  2. To make the donuts: Whisk melted coconut oil, maple syrup and eggs until combined

  3. Add almond meal, protein powder, and baking powder to the mixture until combined

  4. Add batter to the donut tin and bake for 15 minutes or until lightly golden

  5. To make the icing: Combine the melted coconut oil, maple syrup into a bowl over a saucepan or for a 1 minute in the microwave... your choice

  6. Once melted, add the cocao or coco powder until combined and wait until it has cooled down

  7. Add the milk to the cooled down mixture and stir

  8. In a separate bowl, add the coconut

  9. Once donuts are cooled, dip one side into the chocolate icing and then sprinkle it with the coconut

Notes:

  • These donuts can keep in the fridge for 5 days
