Banana and chocolate … ah yes thank you! The bonus, its healthy.
This is super easy to make - took me less than 10 minutes to put the mixture together. It has a cooking time of about 30-40 minutes depending on your oven.
It is a great afternoon snack or something for the lunch box. Yours or your children... or maybe just don't share.
It can be stored for a week or you can slice it up and wrap them individually and freeze it and then just defrost and toast when you need it.
Ingredients:
100 grams butter
2 cups of self-raising flour
1 & 1/2 tsp baking powder
2 free range eggs
1 cup of sugar-free dark chocolate chips
Optional: you can add 1/2 cup coconut or brown sugar if you want it sweeter. I thought it was fine without it but your call.
Method:
Preheat your oven to 18 degrees and line your loaf tin with baking paper.
Mash the bananas and melt your butter
Add the bananas, butter, flour, baking powder and optional coconut sugar into a bowl and combine.
Add the eggs and melted butter to the mixture and combine.
Gently add in 3/4 cup of the choc chips to the mixture, fold it in.
Pour the mixture into the loaf tin and then sprinkle on top the remaining choc-chips.
Place in the oven and bake for 30-40 minutes until skewer/knife comes out clean.
