Apple and Cinnamon Muffins


Can a muffin be cozy?


This muffin is all about a warmness that only comes from a change in weather or a Sunday HAHA. I needed a new recipe for the week and I had an abundance of apples in the house as the little one has decided he hates apples this week. Groan!


A delicious muffin recipe for a lazy afternoon of reading or watching movies or even a lunchbox filler for the week.


This recipe can easily be adapted for gluten free, dairy free and egg free.


This recipe makes 12 muffins.


Ingredients:

  • 1 1/2 cups rolled oats

  • 1 1/2 cups milk

  • 2 small apples (i used red apples but green is fine)

  • 1 tsp vanilla essence/extract

  • 1 cup flour

  • 2 tsp cinnamon

  • 3 tsp baking powder

  • 1 tablespoon brown sugar (optional as the apple is pretty sweet)

  • 120g butter (optional replacement is olive oil … 1/2 cup)

  • 1 egg (optional replacement is 1/4 cup apple sauce)


Method:

  1. Preheat oven to 180 degrees and grease up your muffin tray

  2. Cut up your apple to quite small piece if you like chunks or grate the apple if you want to keep it hidden

  3. In a bowl, add the milk, vanilla, apple and rolled oats and let it soak for 15 minutes

  4. In a separate bowl, add all the dry ingredients and mix until combined

  5. After 15 minutes, add the wet ingredients to the dry and combine

  6. Add a spoonful of mixture to the muffin tray. I like the muffins to be big so I filled each muffin case evenly to get 12 muffins

  7. Bake for 20-30 minutes depending on your oven. The muffins will be golden and have a bounce when gently touched.
